You’re gonna love this one! I’m all about the ease and the flavor of rotisserie chicken, and lately it’s been my obsession to see how many recipes I can shortcut by using them. I’m proud to share the lastest (and best) with you so far. These are as healthy as they are good, and so you can imagine my satisfaction when my husband actually requests that I make them again. Healthy Asian Chicken Lettuce Wraps
1 rotisserie chicken
1 t. olive oil
1 cup coarsely chopped onion
1 T. minced garlic (or 3 cloves)
1 t. minced ginger
1 8 oz. can water chestnuts, coarsely chopped
¼ cup soy sauce
1 T. rice vinegar
1 T. sesame oil
lettuce leaves
shredded carrots, chopped green onion, peanuts, and sesame seeds (for garnish)
Pull meat from rotisserie chicken, chop finely, and set aside. Heat olive oil in large saucepan on medium. Sautee onion, garlic and ginger for 3 minutes. Add chicken and water chestnuts to pan. Stir in soy sauce, rice vinegar, and sesame oil and cook until heated. Serve in lettuce leaves and garnish with shredded carrots, green onion, peanuts, and sesame seeds.
THG Tip: You’re going to love this freezer meal! Prepare the chicken filling ahead of time, freeze, and then reheat and serve with fresh lettuce and toppings. This makes a great last-minute healthy dinner or snack.
