Avocado Pine Nut Salad xxx

This is one of my all-time favorite salads!  I just love the flavor blend of the avocado, red onion, feta, and pine nuts. I hope you’ll love it too. Let me know what you think by leaving a comment below.

Avocado Pine Nut Salad

Greens (I like spring mix or spinach)

Grilled chicken (use leftover grilled chicken, such as Dynamite chicken. Click HERE for recipe.)

low fat feta cheese

pine nuts

chopped avocado

chopped red onion

Poppy Seed Dressing

3/4 cup sugar

1 tablespoon dry mustard

1/2 teaspoon salt

1/3 cup cider vinegar

2 tablespoons chopped yellow or white onion

1 cup olive oil

1 1/2 tablespoons poppy seeds

a few drops of lemon juice

Mix sugar, mustard, salt, cider vinegar, and onions in blender. Beat oil in gradually until smooth. Stir in poppy seeds. Chill before serving.

Happy Gal Tip: Keep this dressing recipe in the fridge to use on salads for the next few weeks.
