You’re going to love this recipe! It’s pretty soupy, so you’ll want to spruce it up with some of these delicious toppings. And – BONUS – this makes a great freezer meal. Check out THIS post for some great freezer meal tips.
Chicken Tortilla Soup
1- 28 oz. can crushed tomatoes
2- 8 oz. cans tomato sauce
2 cloves garlic, minced
4 cups chicken broth
2 Tablespoons sugar
3 teaspoons chili powder
1 teaspoon salt
½ teaspoon oregano
1 4oz. can diced green chilies
2 cups rotisserie chicken, cut into bite sized pieces
Desired taco toppings (lettuce, fat free sour cream, fat free cheese, salsa, olives, tomatoes, avacados, green onion, cilantro, etc.)
Combine in large sauce pan. Bring to a boil and then simmer for 30 minutes. This is very soupy, so you will want a lot of taco toppings for sure. THG Tip: If using this for a freezer meal, prepare and freeze the soup in advance, then chop up fresh toppings for serving.
