Chicken Marsala with Cilantro Cucumber Sauce

Chicken Marsala

12 chicken tenders, trimmed

1 ½ cup plain yogurt

Juice of 1 lemon

½ cup chopped onion

4 cloves garlic, minced

¼ teaspoon ground ginger

¼ teaspoon cayenne

1 teaspoon garam masala

1 teaspon kosher salt

Mix chicken with remaining ingredients and freeze in freezer bag. When ready to serve, thaw and remove chicken from marinade. Grill, then serve with fresh Cilantro-Cucumber Relish.

Cilantro Cucumber Relish

1 cucumber, peeled, seeded and diced

½ cupfinely diced onion

¼ cup chopped cilantro

2 tablespoons lemon juice

½ teaspoon salt

½ teaspoon sugar

¼ teaspoon pepper
