You’re going to love this one! It makes for such a unique, refreshing lunch – or it can even hold it’s own for dinner.

Loaded Yam

Baked yams

Craisins

Low fat feta cheese

Chopped pecans

Chopped green onions

Shredded rotisserie chicken

Salt and pepper

Mash yam with fork, then top with remaining ingredients. Don’t die because it is so much better than you thought it was going to be!
