Yams and Apples
2 pounds yams, peeled and cubed into
1-inch chunks
3-4 apples of choice, cored and cut into
1-inch chunks
2 tablespoons olive oil
1 tablespoons fresh thyme
1/4 cup sugar-free maple syrup
2 tablespoons fresh lemon juice, plus zest
1 teaspoon kosher salt
1/4 teaspoon ground black pepper
Preheat oven to 400 degrees. Place prepared yams and apples in a large bowl. Mix the rest of the ingredients together, pour over the yams and apples, and toss until they are all coated evenly.
Line a large, rimmed cookie sheet with tin foil. Spread mixture onto the cookie sheet in one thin layer (use 2 cookie sheets if needed) and cook for about 40 minutes or until apples and yams are soft, stirring every 10 minutes.
Serve warm and enjoy! This is a great side dish for Thanksgiving dinner.
