You’re going to love this recipe.
My favorite dinners are the ones that give me a lot of leftover options. This week’s CHOW does exactly that. The obvious way to serve Salsa Chicken is in a tortilla with lots of great taco toppings. But don’t stop with a tortilla…See below for all of the different ways you can make this healthy, and create some variety with the leftovers for lunch or another dinner.
- 4-6 chicken breasts, trimmed
- 1 16 oz. jar salsa
- 1 cup fat free sour cream
- 1 packet taco seasoning
Desired taco toppings, such as fat free sour cream, chopped tomato, sliced olives, black beans, sliced green onion, a little bit of fat free shredded cheese, shredded lettuce, sliced avocado, cilantro, and salsa.
Place chicken in slow cooker. Pour salsa over the top. Cook until very tender. Shred chicken. Stir in sour cream and taco seasoning to taste.
Serve Salsa Chicken in…
- A whole wheat tortilla
- Lettuce leaves (like a lettuce wrap)- great for cutting down on processed foods and carbs. (See my upcoming post, “The Skinny on Carbs.)
- As a salad with lettuce and taco toppings
Another bonus: this can also be prepared as a freezer meal. Double the recipe, and then freeze half of it to use for an easy dinner on a busy night.
