Honey Chicken Stir Fry

Fast, easy, good! You’re gonna love this healthy stir fry!

Honey Chicken Stir Fry 

1 lb. chicken diced into pieces

1 clove garlic minced

1/8 t. salt

1/8 t. pepper

2 t. olive oil divided

4 T. honey

2 T. low sodium soy sauce

1 lb. frozen stir fry veggies

2 t. cornstarch

1 T. water

Saute chicken and garlic in 1 t. olive oil.  Add honey, soy sauce, salt and pepper.  Once chicken is cooked and sauce has coated the chicken remove from skillet.  Add 1 t. olive oil and frozen veggies.  Cook them 4-5 minutes until soft.  Add chicken back in.  Mix cornstarch and water, add to chicken hand veggies.  Let simmer until it thickens; about 1-2 minutes.  Serve over rice or quinoa.
