This salad is perfect for fall: fresh apples and pears in season, with the tang of cranberries and feta cheese, and the rich flavor of bacon…my mouth is watering! You’re going to love this Honey Red Wine Vinaigrette dressing, and you’ll especially love how quickly this salad comes together. Hardly any chopping!
This sugared pecans recipe comes from my cookbook, Healthy Eating The Happy Gal Way. Using maple syrup as a sweetener, this salad contains only natural sugars. Give it a try and let me know what you think in the comments below.
Salad
Mixed greens
Feta Cheese
Bacon bits
Cubed apples
Cubed pears
Pomegranate seeds or craisins
Sugared Pecans
Honey Red Wine Vinaigrette
 
Sugared pecans recipe:

2 cups pecans
1/3 cup pure maple syrup
1/8 tsp. salt
Preheat skillet over medium-high heat. Add nuts, maple syrup, and salt. Cook, stirring frequently until syrup is carmelized and nuts are toasted, about 3 minutes. Remove from pan and let cool completely.
 
Honey Red Wine Vinaigrette recipe:

1/2 c. red wine vinegar
1/2 c. honey
1-2 cloves minced garlic
1 tsp. Kosher salt
1 tsp. coarsely ground black pepper
1/2 c. olive oil
In a blender, combine vinegar, honey, garlic, salt, and pepper. Place lid on blender and blend on high. While blender is, running, add oil in a steady stream. Store in refrigerator for about 2-3 weeks. Shake well before serving.

  1. I like the sight snd sound of your salad recipe. I love pears. Check your recipe for sugared pecans as it lists 2 cups of almonds.
